A scrumptious meal, perfect for the weekend or a hangover! I love Mexican food with spicy meat, guacamole, salsa, tortilla chips and loads of other delicacies. This dish is easy to make and tastes really good. The tortilla chips are tortilla pancakes cut into triangles and then fried in olive oil and sprinkled with salt. They taste so good and can be sprinkled with lots of different spices. Try these nachos with delicious toppings or my homemade tacos with filling. Enjoy!
Ingredients
Spicy au gratin chicken
6 chicken breasts
1 packet Fajita spices, e.g., from Santa Maria
2 onion, cut into wedges
2 cloves of garlic, finely chopped
2 capsicums, cut into thin strips
1 tin of corn
1 bag grated cheddar
Crispy tortilla chips
4 tortilla pancakes
Olive oil
Salt flakes
Extras
Jalapenos
Salsa
Crème fraiche
Parsley or cilantro to serve

Spicy au gratin chicken
Heat the oven to 200 C convection.
Cut the chicken breasts into cubes and brown them in a pan with olive oil along with the Fajita spices. Put the chicken into an ovenproof dish, if necessary. Line it with baking paper. Fry the onions, garlic and peppers in the pan until ready. Add the corn and spread it over the chicken. Bake the chicken in the oven for 15 min. Then sprinkle with cheddar cheese and bake for another 15 min.
Crispy tortilla chips
Cut the pancakes into small triangles. Heat a pan with oil and fry the tortilla chips until crispy and golden. Place the tortilla chips on kitchen roll so it can soak up any extra oil, and sprinkle with salt.
Top the spicy au gratin chicken with jalapenos, salsa and sour cream. Serve the crispy tortilla chips with guacamole. Buen provecho!
