Vegetarian burgers with quinoa and feta cream—the most delicious meatless burgers. Mmm, I love a good messy burger with a good burger bun, dressing, salad, steak and cheese. But a messy burger can just as easily be vegetarian, which is what I’ve done here with a delicious and crispy quinoa burger, flavored with cheese and herbs. I baked soft and airy burger buns according to this recipe, made a good feta cream/feta dip flavored with fresh parsley, pickled red onion and various vegetables. Ingredients
Quinoa burger (makes 6)
350 g quinoa, cooked
4 eggs
3 tbsp. breadcrumbs
2 tbsp. all-purpose flour
100 g grated cheese
2 cloves garlic, minced
1 onion, finely chopped
1 tsp. salt
1 tsp. chili oil or dried chili
1 tsp. oregano
1 tsk cumin
Salt and pepper
Plenty of olive oil for frying
Feta cream
Extras
Burger buns, e.g., these homemade ones
Salad
Avocado
Tomato
Cucumber
Red onion, e.g., pickled red onion
Approach
Quinoa burgers
Mix the cooked quinoa with the other ingredients so it forms a sticky mixture. Form the mixture into 6 equal burgers. If you think the mixture is a bit too sticky, wet your fingers, so it’s easier to work with.
Heat a pan with olive oil. The olive oil should preferably cover the entire pan. Fry the burgers on a high heat for about 3 minutes on each side or until golden and crispy. Let the burgers drain on a piece of kitchen towel.
Get the other ingredients ready and assemble the burgers with feta cream, vegetables and the quinoa burgers. Enjoy!
