Daim cheesecake in a glass – Recipe for easy Daim cheesecake with homemade caramel sauce served in a glass. One of my most popular recipes here on the blog, it is min Daim cheesecake. It’s so easy and delicious and a real crowd-pleaser, and it’s a cake pretty much anyone can make. Now I have made the cake in small serving glasses instead of a large cake. The dessert consists of a biscuit base with the most delicious cream cheese with Daim, homemade caramel sauce and chopped Daim on top. The cheesecake filling is made without leavening, so it is therefore important that the cream is whipped to a firm foam and carefully turned with the cream cheese, as this way it holds its shape and does not clump together.
The dessert can be made the day before serving and it is perfect to bring to e.g. New Year’s Eve or Easter. Enjoy!

Ingredients

Biscuit base
Chop the biscuits in a food processor so that they are finely ground.
Melt the butter and mix it well with the biscuits to a uniform mass.
Divide the biscuit mixture into approx. 8 glasses and put them in the fridge while you make the cream cheese.
Cream cheese cream
Beat the cream cheese, vanilla, icing sugar and lemon juice in a bowl.
Whip the cream until frothy in another bowl.
Fold the whipped cream into the cream cheese and stir in the coarsely chopped Daim. Spread the cream over the biscuit mixture.
Refrigerate for 1 hour, but preferably overnight.
Caramel sauce
Can be made in good time:
Put sugar and water in a saucepan.
Cook until it starts to turn light brown.
Remove the pan from the heat and add the butter.
Put the pan back on the heat and add the whipping cream a little at a time while stirring well.
Add salt.
Let the caramel bubble over medium heat for approx. 5 minutes or until thickened.
Pour it into a bowl to cool.
Decorate the cake with cooled caramel sauce and chopped Daim.
Serve immediately or refrigerate until serving. Bon appetite!
