Chocolate cake with chocolate truffle and Rice Krispies

Chocolate Cake with chocolate truffle and Rice Krispies is what I have for you today. A lovely and easy chocolate sponge cake recipe with a thick layer of chocolate truffle with Rice Krispies. This cake is so quick to make and is perfect to serve guests as it can be made a day in advance. The chocolate cake itself is my very popular sheet-pan chocolate sponge cake. It just keeps getting. I’ve also made with delicious peanut butter frosting, caramel and peanuts. Enjoy!

Chocolate truffle layer

400 g dark chocolate, chopped or buttons

300 ml cream

85 g butter

25 g glucose syrup

200 g Rice Krispies

Approach

Bake the chocolate cake and let it cool.

Chocolate truffle layer

Put the chocolate in a bowl. Heat the cream, butter and glucose syrup in a little saucepan until it begins to just bubble. Take the saucepan off the heat and pour it carefully over the chocolate. Set it aside for a little while. Then, using a spatula, stir in the center of the bowl until the chocolate mixture combines and becomes glossy and even. Add the Rice Krispies and stir well. Spread the chocolate truffle layer over the cake and refrigerate it until the chocolate has settled. Then cut the cake into pieces and serve. Enjoy!
