Spinach pancakes

Spinach pancakes are really easy to make and they taste great. It’s a great way to get a few more greens into your diet, and it gives the pancakes a nice green color. The pancakes can be eaten for lunch and dinner. Enjoy the pancakes as they are or serve them with a filling, like Mexican pancakes, or with crispy chicken pieces and salad or these veggie balls, which can be shaped into round balls and roasted like falafels. Enjoy!

Ingredients

Spinach pancakes (makes about 10):

100 g fresh spinach

3 eggs

200 ml cream

200 ml milk

150 g all-purpose flour

1/2 tsp. salt

Butter for frying

Approach

Spinach pancakes:

Put the spinach, eggs, cream and milk in a blender and blend together. Add the flour and salt and blend to an even pancake batter.

Melt the butter in a pan and fry the pancakes. Enjoy!
