I love the smell of freshly baked buns on a sunday morning, nothing beats that! These buns are so easy to make because you don’t need a mixer. I have used sunflower seeds, but you can use all kinds of seeds eg. linseeds or pumpkin seeds. The buns are also perfect as a sandwich. Good luck!
Ingredients
Dough to approx. 12 buns
Buns:
5dl lukewarm water
15g yeast
2 tbsp. icelandic skyr
100g sunflower seeds (save a bit to sprinkle on top of the buns)
1 tbsp. honey
200 g graham flour
400 g wheat flour
1 big tsp. salt
Approach
Buns:
Dissolve the yeast in lukewarm water in a big bowl. Stir in the icelandic skyr, sunflower seeds and honey together in the bowl. Add in the flour a little at a time while you stir it with a spoon. Stir it until it is a uniform mass. The dough should be sticky and wet. Cover the bowl with cling film or a clean dish towel and let it sit for approx. 2 hours in room temperature.
After an hour you turn on the oven on 250 C or 482 F with a baking sheet in side of it. After 2 hours you take your dough and with a two wet spoons forming buns and placing them on a baking paper pull the paper onto the hot baking sheet. Bake the buns for approx. 15 minutes or until they are golden and crusty/hard when you tap on them. Enjoy the buns while they are still hot with a layer of ice cold butter or my homemade nutella.
