These thick pancakes are so easy to make and taste wonderful. The pancake batter is made almost the same way as my recipe for the best American pancakes.

Blend cottage cheese, egg yolks, and milk together into a smooth mixture.
In a bowl, mix sugar, flour, baking powder, vanilla sugar, cardamom, and salt. Fold in the blended cottage cheese mixture, then fold in the melted butter. Just before using the batter, whisk the egg whites until stiff peaks form. Gently fold the stiff egg whites into the batter.
Heat a pan and melt a little butter on it. Cook the pancakes, 1–2 at a time. Serve immediately. Enjoy!
