Meringue nut cakes with whipped white chocolate cream and of course the sweet and tasteful NERGI® mini kiwi berries as garnish😍 The mini kiwi berries are in season and available in stores right now💚🥝
 So yummi and rich in vitamins and minerals.

Chocolate cream
4 dl heavy cream
200 g white chocolate, chopped
 
Nut meringue cake
4 egg whites
250 g sugar
250 g nuts, e.g., almonds and hazelnuts, chopped
 
Additionally
1 punnet of NERGI® (kiwi berries)
White chocolate, grated
 
Combine heavy cream and chocolate in a saucepan. Heat it slowly while stirring until the chocolate is melted. Pour the mixture into a bowl through a sieve. Cover the bowl with plastic wrap and refrigerate for a minimum of 6 hours.
 
Nut meringue cake
Preheat the oven to 165°C (325°F) on convection mode.
Whisk the egg whites until foamy. Gradually add the sugar and whisk until a stiff and glossy meringue. Gently fold the nuts into the meringue. Line a baking dish (24x30 cm) with parchment paper. Transfer the meringue mixture into the baking dish.
Bake the nut cake for about 35 minutes.
Chill the nut cake until completely cold.
 
Cut out 8 nut cakes with a cutter, approx. 7 cm. Whip the cream until it forms stiff peaks and transfer it to a piping bag with a star tip. Pipe the cream onto the cakes, decorate with kiwi berries, and grate white chocolate on top. Serve immediately or refrigerate until serving. Enjoy!
