Tiramisu

Tiramisu – A recipe for the best Italian dessert – tiramisu – with ladyfingers, coffee, liqueur and mascarpone. However, you can easily omit both the liqueur.

Mix the strong coffee with the cocoa in a bowl and add the Amaretto if using.

Whisk the egg yolks, cane sugar and vanilla until light and fluffy. It will take about 5 minutes. Turn down the speed a bit and add the mascarpone and whisk well together. Add the whipped cream a little at a time, as you whisk. Whisk until the cream is fluffy and makes little peaks.

Dip the ladyfingers into the coffee/cocoa/amaretto mixture and line them next to each other in the bottom of a dish. Cover with half the cream. Dip more ladyfingers and place them on the cream and cover with the rest of the cream. Sprinkle with cocoa and place the dish in the fridge for about 4 hours, but preferably overnight.
