Scones with cottage cheese

Scones with Cottage Cheese – Here’s the recipe for delicious homemade high-protein scones with cottage cheese and chocolate.
These cottage cheese scones taste amazing and are very easy to make. The dough is made with cottage cheese, eggs, melted butter, and honey, which are mixed together. Then all-purpose flour, baking powder, vanilla sugar, salt, and chopped dark chocolate are folded in. The dough is turned out onto a floured surface and cut into about 9 scones, which are baked until golden and crisp. Freshly baked scones taste wonderful served with butter.

Scones with Cottage Cheese

These scones are made with cottage cheese in the dough, which adds extra protein and gives the baked scones a lovely texture. You can’t taste the cottage cheese at all—it simply melts into the dough and makes the scones extra moist. They are not overly sweet, as they are only sweetened with honey and vanilla sugar. The dark chocolate can easily be replaced with milk chocolate if you prefer a sweeter flavor. The scones can also be frozen and simply reheated before serving.

Instructions

Preheat the oven to 200°C (fan-assisted / convection).

Mix the cottage cheese, eggs, melted butter, and honey together in a bowl.

Combine the all-purpose flour, baking powder, vanilla sugar, and salt, then fold it into the cottage cheese mixture. The dough should be thick and slightly sticky. Finally, fold in the chopped chocolate.

Turn the dough out onto a floured surface. Sprinkle a little flour on top of the dough and gently press it into a square about 2 cm thick. Cut the square into approximately 9 scones.

Place the scones on a baking tray lined with parchment paper. Bake for about 15 minutes, or until golden. Let the scones cool on a wire rack before serving. Enjoy!
