Puff pastry with spinach filling – A recipe for puff pastry with spinach filling with feta, dill, and ricotta. This puff pastry dish is inspired by Greek Spanakopita, which is usually made with filo pastry. It’s a really easy everyday dish, that can be served with meat or a salad.

Puff pastry with spinach filling

Heat the oven to 200 C convection.

Mix all the ingredients into an even mixture.

Put the puff pastry on a baking sheet lined with baking paper. Spread the filling in the center of the dough (on the long side). Make diagonal cuts in the dough on each side of the filling, about 1/3 f the way in so it looks like a herringbone pattern (see video). Now alternate folding each strip of dough from each side over the filling, so you “braid” the entire plait of puff pastry. Gather the puff pastry dough at the ends of the plait and fold them under. Brush with the egg wash and sprinkle with sesame seeds.

Bake the puff pastry plait for 30-35 min. Let it cool slightly and serve. Enjoy!
