Peanut Butter Noodles – A recipe for a creamy noodle dish with peanut butter and soft-boiled eggs.
A perfect quick dish for lunch or dinner when you don’t have much time. It’s slightly spicy as there is 1 tbsp. sriracha in it, but you can adjust it to suit your taste.
Ingredients
Peanut butter noodles (serves 1)
1 tbsp. mayonnaise
1 tbsp. sriracha
1 tsp. sugar
1 little tbsp. soy sauce
1 large tbsp. peanut butter
100-150 g noodles
Ca. 50 ml boiling water from the noodles
Topping
1 soft-boiled egg
Sesame seeds
Chopped parsley or coriander
Approach
Peanut butter noodles
Stir the mayonnaise, sriracha, sugar, soy sauce, and peanut butter together. Boil the noodles and add 50 ml of the boiling noodle water to the dressing and stir until combined and even. Then add the noodles to the dressing. Top with soft-boiled eggs, sesame seeds and salad leaves. Serve immediately. Enjoy!
