Ingredients

Lemon cake

200 g sugar

Finely grated zest of 1 organic lemon

1 tsp. vanilla sugar

2 eggs

65 g melted butter

65 g sunflower oil

Juice of 1/2 lemon

100 ml milk

100 ml crème fraiche

240 g all-purpose flour

1 tsp. baking powder

Lemon glaze

Ca. 250 g confectioner’s sugar

30 ml milk

30 ml lemon juice

Approach

Lemon cake

Heat the oven to 175 C convection.

Put the sugar, grated lemon zest, and vanilla sugar in a mixing bowl. Rub the lemon zest into the sugar with your fingers (it gives the best lemon flavor). Add the eggs and beat until fluffy. Whisk in the melted butter, sunflower oil, lemon juice, milk, and crème fraiche. Mix the all-purpose flour and baking powder together, sift it into the batter and carefully fold it together with a dough scraper. Line a 2 L loaf tin with baking paper. Pour the batter into the tin and bake the cake for about 40 min.

Let the cake cool on a wire rack.

Lemon glaze

Stir the ingredients together into an even, slightly thick-flowing glaze. Spread the glaze over the cake. If you like you can decorate the cake with candied lemon slices.

Cut the cake into slices and serve. Enjoy!
