Homemade French fries (deep fried)

French fries can always be eaten. They are perfect with a good steak, béarnaise sauce, fish ‘n chips, as a snack, for the hangover and, of course, with a good burger.

My sister and I deep-fry French fries twice: first in 150 C hot oil and then 200 C hot oil. You can easily do it 3 times if you want even crispier fries. Use large baked potatoes (peeled) and cut them into oblong fries that aren’t too thick.

You don’t need to have a deep-fat fryer to make delicious fritters. A large thick-bottomed pot can just as easily be used. Enjoy!

Peel the potatoes and cut them into oblong fries (not be too thick, because then they won’t crisp properly). Then put the potatoes in a bowl and cover with water. Add 2 tsp. salt. Let them stand in the water for 30 minutes.

Heat the oil in a deep-fat fryer or a large thick-bottomed pot. The oil needs to have a temperature of 150 C.

Dry the potatoes well in a few dish towels so they aren’t wet when they go into the oil.

Put a handful of fries in the oil at a time and let them cook for 3 minutes. Rest them on a rack so they can drip while you fry the remaining fries.

Turn up the heat of the oil so it reaches a temperature of 200 C. Fry the potatoes for 3 minutes or until they are crisp and golden. Transfer them to a bowl and sprinkle well with salt. Enjoy French fries immediately. Bon appetite!
