Hoisin noodles with vegetables

Hoisin noodles with vegetables – A recipe for a delicious noodle dish with hoisin sauce, vegetables, and crispy fried eggs.

This recipe is for approx. 2-3 people, but you can easily multiply for more servings – for more people or for several days. The dish is vegetarian, but you can easily add, e.g. roast chicken or beef.

Hoisin sauce

3 tbsp. hoisin sauce

1 tbsp. soy sauce

1 clove garlic, crushed

1 tsp. sriracha or another chili sauce

1 tbsp. rice vinegar

1 tbsp. sesame oil

Hoisin noodles with vegetables

1 red onion, thinly sliced

2 large carrots, julienned

200 g finely grated white cabbage

125 g sugar-snap peas, thinly sliced

Oil for frying


200 g noodles, I used egg noodles

2-3 eggs

Oil for frying


Sesame seeds


Hoisin sauce

Mix the ingredients together for a sauce.

Hoisin noodles with vegetables

Fry the red onion, carrots, white cabbage, and sugar-snap peas in a little oil in a pan.

Cook the noodles as indicated on the package. Add the noodles to the pan with the vegetables and pour the sauce on top. Mix well and leave it on low heat.

Heat some oil in a pan. Crack 2-3 eggs onto the pan and fry them on a high heat so they become crispy, but the yolk is still runny. Arrange the noodles in bowls with a fried egg on top. Sprinkle with sesame seeds and cilantro. Serve immediately. Enjoy!
