The recipe consists of broccolini placed in an ovenproof dish, tossed with pesto, oil, and salt before being baked in the oven. They only need about 10 minutes to bake, keeping them crisp while developing a nice color. The roasted broccolini is then arranged on a platter and topped with burrata, chopped pistachios, lemon zest, salt, and pepper.

Broccolini with pesto and burrata

Preheat the oven to 200°C (400°F) fan.
Rinse the broccolini well and trim the bottom ends if necessary. Place them in an ovenproof dish. Add pesto, oil, and salt, and mix well. Bake in the oven for 10 minutes.
Arrange the roasted broccolini on a serving platter and tear the burrata over the top. Sprinkle with pistachios and grate lemon zest over. Optionally, drizzle with oil and season with salt and pepper. Serve immediately. Enjoy!
