Preheat the oven to 225°C (437°F) on the convection setting.
Cut the apricots in half and remove the pits.
Place the halved apricots in a baking dish and drizzle with honey and oil. Sprinkle with salt and spread thyme over them. Bake the apricots for about 15 minutes, or until they are soft and slightly browned.
Marinated onion
Mix the shallots, vinegar, and oregano together and let it sit for 15 minutes.
Open the burrata and spread it out on a small, flat dish. Place the baked apricots on top, making sure to include all the delicious juices. Add the marinated onions, then sprinkle with pine nuts, parsley, and salt and pepper. Serve immediately. Enjoy!
