These veggie balls are the perfect substitute for regular meatballs. You can use whatever vegetables you have – grated eggplant, finely chopped cauliflower or finely chopped broccoli.

250 g halloumi
2 carrots, roughly grated
2 eggs
2 tbsp. breadcrumbs
2 tsp. dried or freshly chopped chili
1 tsp. garlic powder
1 tsp. onion powder
Pepper
Oil for frying
Approach
Veggie balls with halloumi
Roughly grate the halloumi and the carrots. Put the grated halloumi and carrots in a bowl and combine them together with the other ingredients. Let the mixture stand in the fridge for 15 minutes.
Then heat a pan with oil and fry about 10 equally large veggie balls. Fry the veggie balls for 2-3 minutes on each side until crisp and golden. Serve the veggie balls while still hot. Enjoy!
