Heat the oven to 185 C convection.
Scrub the potatoes well and leave the skins on. Put the potatoes on a baking sheet lined with baking paper and bake them in the oven for 1.5 hours.
Let the potatoes cool a bit, then cut them in two. Hollow out each half of the potatoes and place the potato filling in a bowl.
Fry the onion, garlic, and bacon together in a pan. Add the mixture to the potato filling and add the crème fraiche, corn, grated cheese, and parsley. Season with salt and pepper.
Heat the oven to 200 C convection.
Divide the filling between the hollowed-out potatoes and sprinkle with cheese on top. Bake the potatoes again for 15 min. Serve immediately. Enjoy!
