Smashed potatoes with pepperoni

Smashed potatoes with pepperoni – Recipe for delicious baked mashed potatoes in muffin tins with a filling of tomato sauce, pepperoni and grated mozzarella cheese. These potato muffins are so delicious and easy to make. They consist of boiled potatoes which are mashed into metal muffin tins so that they form a bowl. The potatoes are baked and filled with a delicious filling, which is then baked again. These potatoes are perfect to serve as a side dish for a dinner, e.g. together with this tender long-roasted culottes with garlic and herbs.

I have filled the potatoes with tomato sauce, pepperoni and grated mozzarella cheese. They are sprinkled with dried oregano, so they taste almost like a pepperoni pizza. They can also easily be filled with other fillings, such as these stuffed potatoes with bacon, onion and cheddar. The stuffed potatoes can be made the day before and then thawed just before serving. They can also be frozen. I have used a metal muffin tin, but they are even better with a silicone tin, so you ensure that the potatoes do not stick to the tin. Enjoy!

Turn on the oven at 200 C fan.

Boil the potatoes until tender in salted water.

Put oil in the holes of a metal muffin tin. Place a potato in each hole and mash them down with the bottom of a glass or e.g. a small deciliter measure so that it forms a bowl.

Bake the potatoes for 15 min.

Then fill the potatoes with tomato sauce, grated cheese, pepperoni and oregano. Bake for another 15 min. Take the baked stuffed potatoes out of the tin and decorate them with finely chopped parsley. Bon appetite!
