Pizza sandwich – Recipe for the most delicious pizza sandwich with pesto, burrata, baked tomatoes and Parma ham. Pizza sandwich is pizza dough that is brushed with olive oil, folded and baked. The pizzas are then filled with delicious toppings and then they are ready to serve. These pizza sandwiches have gone viral on social media, and I understand that. They taste great and can be filled with all kinds of fillings. I have filled them with homemade pesto, burrata, arugula, parma ham, baked tomatoes, onions and balsamic glaze. The pizza dough itself is homemade, but here you can easily save time by buying a ready-made lump of pizza dough. The pesto can also be bought. Instead of the baked tomatoes, you can use fresh tomatoes cut into cubes and tossed with finely chopped basil, balsamic vinegar, olive oil, salt and pepper.
This recipe makes two pizza sandwiches. They are quite large, so there is plenty for 4 people if you cut each pizza sandwich in 2. Enjoy!

Pizza dough
Pour water into a mixer bowl and dissolve the yeast in the water. Add olive oil, flour and salt. Knead the dough with the dough hook for approx. 10 minutes The dough should be shiny and flexible and release the bowl. If the dough leaves the bowl quickly, it must still be kneaded for the 10 min. to become blank. Place a damp tea towel over the bowl and let the dough rise for 1.5 hours at room temperature.
Baked tomatoes
Turn on the oven at 200 C fan.
Place the tomatoes, preferably on the stem, one by one on a plate and sprinkle oil, salt and pepper on top. Bake the tomatoes for approx. 20 minutes or until they have collapsed a little. Remove the tomatoes from the oven and let them cool until ready to use.
Pesto
Blend all the ingredients into a thin and creamy pesto. Season to taste with salt and pepper. Refrigerate until use.
Pizza sandwich
Turn on the oven at 250 C hot air with either a baking tray inside or a baking steel.
Divide the dough into two equal parts. Sprinkle some flour on a piece of baking paper and spread each part into a round pizza with your hands, not a rolling pin, because then you knock the air out of the dough. The dough should be wide and thin. Drizzle olive oil onto each pizza, fold them over and drizzle olive oil on top (you may want to watch the video above if you’re unsure). Slide the two folded pizzas into the oven and bake them for approx. 15-20 min. They should be golden.
Carefully open the pizzas and fill them with pesto, burrata, rocket, parma ham, baked tomatoes, onions and balsamic glaze. Close them again. Cut them in half.
