Pasta with kale pesto – A recipe for the most delicious creamy pasta dish with kale pesto, crispy breadcrumbs, and burrata. This pasta dish is one of my favorites when it comes to pasta dishes.
Where can I buy burrata?
Burrata has become really popular in recent years, so it’s actually quite easy to get your hands on it now. I buy it in Bilka and Netto, but you can also buy this delicious cheese at e.g. Supermarco in Copenhagen or LaTreccia,. Galbani has also started selling it.

200 g kale
1 bunch fresh basil
50 ml olive oil
100 g pine nuts, lightly toasted
1 clove of garlic
2 tbsp. grated Parmesan
Salt and pepper
100 ml pasta water
25 g bread, preferably day-old bread
1 tbsp. olive oil
400 g pasta of your choice
2 pieces burrata
Blanch the kale for 2 minutes in boiling water. Then pour off the water. Put the kale in a blender with the other ingredients and blend until combined and even.
Cook the pasta as indicated on the package. Add 100 ml pasta water to the blender with the kale pesto and blend again to an even and creamy pesto. Season with salt and pepper.
Process the bread to perfectly fine breadcrumbs. Put oil in a pan and fry the breadcrumbs until they are golden and crispy.
Mix the kale pesto with the cooked pasta and serve the pasta dish with burrata and crispy breadcrumbs. Enjoy!
