Ingredients

Pasta in bell pepper sauce

3 onions, diced

4 cloves garlic, chopped

Olive oil for frying

2 tbsp. tomato purée

350 g red bell pepper, diced

1/2-1 whole red chili, diced

100 ml vegetable stock (100 ml boiling water with 1 stock cube)

100 ml cream or cooking cream

350 g pasta, e.g., rigatoni

50 ml pasta water

Grated parmesan (optional)

Approach

Pasta in bell pepper sauce

Sauté the onion and garlic in the olive oil in a pan. Let them simmer over a medium heat, without browning, only becoming transparent. Add the tomato purée and let it cook. Add the peppers and chili and fry until the peppers are soft.

Pour the fried vegetables into a blender along with the vegetable stock and blend to an even and creamy sauce. Pour it back into the pan and add the cream. Let it simmer while the pasta cooks.

Pour the pasta water and pasta into the sauce and fold well. Serve immediately with grated parmesan. Enjoy!
