Heat the oven to 200 C convection.
Fry the apples in the butter in a pan and add the brown sugar, vanilla sugar, cinnamon, and lemon juice. Fry the apples for about 5 minutes until they are tender and caramelized. Set the apples aside.
Cut the puff pastry into 6 equal squares. Spread the fried apples on half of the squares and close them (see the video). Press the dough together with a fork along the edge. Brush with the egg wash, cut two “pockets” in each pie and sprinkle with the cinnamon sugar. Bake for about 15 min or until crisp and golden. Serve immediately – try them with vanilla ice cream. Enjoy!
