Homemade fluff – A recipe for homemade fluff for ice cream.
Make the fluff just before you’re going to serve it as it loses air quickly and will collapse and become a little runny. You can easily make a double or triple portion and add different flavors to each portion, or you can just make a giant portion of one flavor.
Fluff with raspberries
If you want to make fluff with raspberries, stir about 4 tbsp. raspberry jam into the finished fluff.
Fluff with licorice
If you want to make fluff with licorice, stir in 3 tbsp. licorice powder in the finished fluff.

Homemade fluff
Bring the sugar, water, and vanilla to the boil in a small saucepan. Add the food coloring. Boil the mixture until it becomes a syrup at 117 C.
Whisk the egg whites until stiff. Then pour the sugar syrup into the egg whites in a thin stream as you continue to whisk. Whisk the mixture for about 5 minutes or until it becomes thick and glossy. Your homemade fluff is ready! Enjoy!
