Banana pancakes have been a long time trend, so that isn’t new. I have been trying to find the once i like the most and that is healthy at the same time.These pancakes contains banana, chia seeds and oatmeal. They are really delicious and easy to make. I have also added a bit of cinnamon and I think it fits really nicely. You can eat the pancakes as a breakfast with icelandic skyr and fruit or as a afternoon snack. I wish you all a great day.
Ingredients
Recipe for 4 small pancakes:
2 eggs
½ banana
½ tsp. cinnamon
½ tsp. vanilla powder
2 tbsp. oatmeal
1 tbsp. graham flour (you don’t have to add this)
½ tsp. baking powder
2 tsp. chia seeds
1 pinch of salt
Coconut oil for frying (you can also use butter)
Approach
Pancakes:
Blend together all the ingredients in a blender. Heat up a frying pan to medium heat with some coconut oil and bake the pancakes approx. 2 minutes on each side until they are done. Serve the pancakes with eg. icelandic skyr, fruit, berries, nuts, apple sauce or jam. Bon appetit!
