Date bars with apricots and nuts

These date bars with apricots and nuts are a healthy and delicious snack. These bars are really good and contain only nuts, dates, apricots and coconut oil. I’ve dipped them in 70% dark chocolate, but you don’t have to. They taste just as wonderful without the chocolate. You can also roll the dough into balls, if you prefer, instead of bars. Take them with you when you’re on the go, pop one in your lunch box or grab a bar when you’re hungry for something sweet. Enjoy!

Instructions

Date bars with apricots and nuts

Roast the nuts on a dry pan until they brown. Let the nuts cool slightly.

Put the nuts in a food processor and chop them roughly. Add the apricots, dates and coconut oil and mix until it comes together. Line a little cake tin with baking paper and press the dough firmly into the tin so it’s even. Cool the dough until it’s set. Cut it into bars.

Melt the chocolate and dip the bars into the chocolate or brush the chocolate onto the bars. Sprinkle with desiccated coconut. Put the bars in the refrigerator to set. Once set, store them in an airtight container. Enjoy!
