In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until they are translucent.
Add the pressed garlic, oregano, paprika, and dried chili flakes. Sauté for another minute until fragrant.
Pour in the vegetable broth and canned diced tomatoes. Bring the mixture to a simmer.
Add the orzo pasta to the pot and cook according to the package instructions, usually for about 10-12 minutes, until al dente.
Stir in the heavy cream, mascarpone cheese, and balsamic glaze. Allow the mixture to cook for a few more minutes, ensuring it’s well combined and creamy. Season with salt and pepper to taste.
Finally, stir in the grated Parmesan cheese and chopped basil.
For the tomato salad, combine the halved cherry tomatoes, chopped basil, olive oil, salt, and pepper in a bowl.
Serve the creamy orzo in bowls, topped with the tomato salad. Garnish with additional grated Parmesan cheese.
