Happy December 7th and welcome to another recipe in my Christmas calendar—a recipe for chocolate fudge with nuts and raisins, today. You love fudge, so I now have 3 different fudge recipes including: ordinary fudge with sea salt and fudge with Christmas foam candies. I used milk chocolate in this fudge, but dark chocolate can also be used. The nuts in this fudge are a mixture of almonds and hazelnuts, but next time I make a portion, I’ll try pecans. You can add cranberries instead of raisins or just leave them out completely. Enjoy!

Put the cream, sugar, syrup and salt in a thick-bottomed saucepan and boil it as you continue to stir. Boil it until it reaches 124 C. It will take 25-30 minutes. Then remove the pan from the heat and add the butter and milk chocolate, and stir well until it’s all is melted. Finally, add the chopped nuts and raisins and stir.
Line a 21 x 21 cm mold with baking paper and pour the fudge into it. Put the fudge in the refrigerator until it has set (it will take 1-2 hours). Then cut it into equal pieces and serve. Store the fudge in an airtight container in the refrigerator (it will last for a few weeks in the fridge). Enjoy!
