These baked tortillas taste amazing, are easy to make, and are perfect for a quick weekday dinner. The baked tortillas are made using small tortilla pancakes filled with shredded cheddar cheese and a filling of sautéed chicken with spices, bell peppers, and onions. They become wonderfully crispy when baked with the filling inside. It’s almost like enchiladas, which are tortilla pancakes rolled with meat sauce or tomato sauce. However, these baked tortillas are neither rolled nor baked with sauce.
The baked tortillas are served with a deliciously fresh mango salsa made with diced mango, apple, red onion, and lime juice. I also add chopped parsley, but you can use cilantro if you prefer. In addition, the tortillas are paired with a creamy avocado cream made from avocado, sour cream, garlic, and lime, blended until smooth.
This is a fantastic weekday meal that most people will enjoy. If you want to make it vegetarian, you can replace the chicken with kidney beans.

Baked Tortillas with Chicken
Preheat the oven to 200°C (fan).
Cut the chicken breast into slices and fry them in oil in a pan. Add bell pepper, onion, garlic, soy sauce, cumin, paprika, and dried chili flakes. Fry everything together. Add salt and pepper to taste.
Lay the tortillas on a baking tray lined with baking paper. Add cheese to one half of the tortillas and distribute the chicken filling on top. Sprinkle with the remaining cheese. Fold the tortillas in half and press them down slightly so they don’t open. Brush with olive oil and bake for about 15 minutes until they are golden and crispy.
Mango Salsa
Mix mango, apple, and red onion with olive oil, lime juice, and parsley. Season with salt and pepper to taste.
Avocado Cream
Blend avocado, sour cream, garlic, and lime juice together until smooth. Season with salt and pepper to taste.
Serve the baked tortillas with mango salsa and avocado cream immediately. Enjoy!
