I use very small potatoes with the skin on, as the skin must be completely intact to get the best result. Enjoy!

Fried potatoes with garlic
Rinse the potatoes thoroughly and leave the skins on. Put the potatoes in a pot with water and salt. Add the garlic and bring to the boil. When the water boils, boil the potatoes for 10 minutes.
Drain the water from the potatoes and garlic. Heat a pan with olive oil. Add the potatoes and garlic, season with oregano, salt and pepper and fry the potatoes on a medium-high heat until they develop a crust. It will take 8-10 minutes.
Pour the potatoes into a dish and sprinkle with parmesan and lemon zest. Serve immediately. Enjoy!
