Crack the eggs into a pan over low heat. Continuously stir the eggs with a spatula or a palette knife. When the eggs have been stirred well, turn up the heat a little higher and add the butter while still stirring. The eggs should start to thicken and coagulate, but it takes some time, so be patient.
When the eggs have coagulated and become creamy and the butter has melted together with the eggs, add the crème fraiche. Stir well and season with salt and pepper. Serve immediately with rye bread, tomatoes, and fresh herbs. Enjoy!
