Sausage Rolls with Cottage Cheese – Recipe for easy and delicious high-protein sausage rolls with cottage cheese, eggs, and oats.
These sausage rolls are so good and easy to bake. The dough is made from blended eggs and cottage cheese, into which oat flour, all-purpose flour, salt, and baking powder are folded. After the dough has rested on the counter for a short while to thicken, it is shaped around the sausages, and the sausage rolls are sprinkled with sesame seeds before being baked until golden. The sausage rolls can be enjoyed with ketchup or just as they are.

I also have this version of sausage rolls, where the dough is made with skyr, oats, honey, and sunflower seeds.

If you’d like to make a gluten-free version, you can use gluten-free oats and gluten-free all-purpose flour. I used brunch sausages, as they are the perfect size, but you can also use chicken sausages or Vienna sausages, cut in half. The sausage rolls keep well in the refrigerator for a couple of days and can also be frozen. These sausage rolls are perfect for lunchboxes, picnics, on the go, or as a quick and filling snack before or after training.

Sausage Rolls with Cottage Cheese

Preheat the oven to 200°C (fan-assisted / convection).

Blend the cottage cheese and eggs until smooth. Process the oats in a food processor until they turn into flour. Add the oat flour, all-purpose flour, salt, and baking powder to the bowl with the cottage cheese mixture and stir until a thick dough forms. Let the dough rest on the counter for about 10 minutes so it can thicken and become firmer in texture.

Line 1–2 baking trays with parchment paper. Place about 16 small dollops of dough onto the trays. Gently press a sausage into each portion of dough and spoon more dough on top using two wet spoons. Lightly shape the dough around the sausage (see the recipe video if needed). Sprinkle with sesame seeds.

Bake the sausage rolls for about 25 minutes. Let them cool on a wire rack before serving. Enjoy!
