Pizza muffins

These pizza muffins are so yummy, and they are perfect for lunch.

Ingredients

Pizza muffins (makes 12)

300 ml buttermilk or A38

200 ml oatmeal

2 tbsp. tomato purée

2 eggs

1 tbsp. honey, runny

2 tbsp. olive oil or rape seed oil

100 g grated mozzarella

100 g shredded ham

50 g pepperoni

100 g all-purpose flour

50 g rye flour

A pinch of salt

1 tsp. oregano

2 tsp baking powder

Approach

Pizza muffins

Heat the oven to 200 C convection.

Mix the buttermilk, oatmeal and tomato purée together so the oatmeal absorbs the liquid. Whisk the eggs and honey until fluffy and frothy. Then add the oil. Add the grated mozzarella, shredded ham and pepperoni to the egg mixture. Mix the flour, salt, oregano and baking powder together and fold it into the dough along with the buttermilk and oatmeal. Divide the dough into a 12-bun muffin tin and bake them in the oven for 20-25 min. Let the muffins cool. Enjoy!
