One Pan Marry Me Chicken – Recipe for easy one-pan marry me chicken with creamy, flavorful sauce with chicken, sun-dried tomatoes, and spinach. This dish is so delicious and easy to make, as it’s baked in one ovenproof dish. The recipe is inspired by the popular Marry Me Chicken– a tasty chicken dish in a creamy sauce. Here, I’ve made a slightly different version and added a few more vegetables to the sauce.

The sauce is made with sautéed chicken pieces, zucchini, onion, garlic, halved cherry tomatoes, cooking cream, crème fraîche, bouillon, spices, and sun-dried tomatoes. Everything is placed in an ovenproof dish and baked in the oven, then finished with grated parmesan and fresh spinach stirred into the sauce. The dish is served with pasta.

One Pan Marry Me Chicken

This is the perfect everyday dish since most of the cooking takes care of itself in the oven – and it’s just as good the next day. You can also add other vegetables if you have some that need to be used up.

I like to serve it with fresh fettuccine, but it also goes really well with rice, mashed potatoes, or zucchini noodles.

Instructions

Preheat the oven to 200 C (fan).

Melt butter in a pan and sauté zucchini, onion, and garlic until they are soft. Remove from the pan. Fry the chicken cubes in the pan until they just start to take on color.

Place the chicken and zucchini mixture in an ovenproof dish and add tomatoes, sun-dried tomatoes, sour cream, thyme, oregano, chili flakes, paprika, cooking cream, and chicken stock. Cover with foil and bake in the oven for 20 minutes.

Remove the foil and bake for another 15 minutes without foil.

Cook the pasta.

Stir in grated parmesan and spinach. Season with salt and pepper. Serve the cooked pasta with the delicious chicken sauce. Optionally sprinkle with extra parmesan. Enjoy!
