Instructions

Icelandic skyr balls with ham and squash

Heat the oven to 185 C convection.

Add the Icelandic skyr, oatmeal, eggs, baking powder, salt, and honey to a bowl and blend with a handheld blender (or put all the ingredients in a blender or food processor). Let the mixture rest for 10 minutes until it has set and become a little firmer.

Squeeze the excess water out of the grated squash. Fold the squash, ham, and cheddar into the mixture. Line a baking sheet with baking paper and place 10 equal-sized balls on the baking sheet with two spoons (wet the spoons if you need to). Bake the balls for 20-25 minutes or until golden. Allow the balls to cool completely before cutting them. Enjoy!
