Green Goddess Potato Salad – Recipe for a delicious Green Goddess potato salad with a creamy green dressing made with spinach, lemon juice, cashew nuts, and parmesan.

This potato salad is so lovely and has a fresh, tangy, and creamy flavor. It’s inspired by the popular Green Goddess Salad, which is a wonderful salad with a tangy green dressing tossed with cabbage, cucumber, spring onions, and chives – and often enjoyed with nachos.

Here, I’ve used the same delicious dressing on small boiled potatoes to create this potato salad. The dressing includes fresh spinach, lemon juice, parmesan, Greek yogurt, basil, shallots, olive oil, and cashew nuts. Everything is blended into a creamy dressing and then mixed with boiled and cooled potatoes. The potato salad is garnished with diced cucumber, sliced spring onions, fresh peas, and roasted chopped cashew nuts.

This potato salad is perfect for serving at a buffet or as a side dish for dinner. You can easily prepare it the day before, or just boil the potatoes and make the dressing ahead of time and mix it all together on the day. For best results, add the toppings just before serving. I use Greek yogurt in the dressing, but you can easily omit it if preferred.

Instructions

Green Goddess Dressing
Place all the ingredients in a blender and blend until smooth and creamy. Season to taste with salt and pepper.

Green Goddess Potato Salad
Boil the potatoes with the skin on in salted water. Let them cool completely.

Toss the cooled potatoes with the dressing and refrigerate the potato salad for at least 30 minutes to let the flavors develop. It can also be kept in the fridge for several hours.

Transfer the potato salad to a serving dish or bowl and top with diced cucumber, sliced spring onions, peas, and chopped cashew nuts. Serve immediately. Enjoy!
