It’s a combination of cinnamon bread and banana bread, made with a simple batter containing bananas and buttermilk. Half of the batter is poured into a loaf pan, followed by the cinnamon remonce, which is swirled in. The process is repeated, creating a deliciously caramelized crust. Preheat the oven to 175°C (fan setting).
Melt the butter in a small saucepan. Mash the bananas with a fork, mix them into the butter, and add the buttermilk.
In a bowl, mix together flour, brown sugar, baking powder, vanilla sugar, and salt. Add the banana-butter mixture and stir well. Do not whisk the batter. Add one egg at a time while stirring the batter with a spatula until smooth.
Remonce
Mix melted butter with brown sugar and cinnamon.
Line a loaf tin (about 2.5 L) with baking paper.
Pour half of the batter into the tin, add half of the remonce on top, and swirl it slightly into the batter with a knife. Pour in the remaining batter, add the rest of the remonce, and create swirls in the batter with a knife.
Bake the banana bread for about 50 minutes. Leave the bread in the tin for 15 minutes before transferring it to a wire rack to cool.
Glaze
Mix powdered sugar and water to make a glaze.
Pour the glaze over the cooled banana bread. Slice and serve. Enjoy!
