Chocolate Buns with Cottage Cheese – Recipe for moist and protein-rich chocolate buns with cottage cheese.
These cottage cheese buns are so popular, and now I’ve made them in a sweet version — moist chocolate buns! They are made by blending cottage cheese, honey, and eggs into a smooth, thin batter, into which flour, vanilla sugar, cardamom, salt, and baking powder are stirred. Then chopped dark chocolate is folded into the dough. The dough is dropped onto a baking tray using two wet spoons, making about 8–10 buns. The chocolate buns are topped with pearl sugar and chopped almonds before baking until golden.
When the chocolate buns come out of the oven, they will deflate a bit. It’s important to let them cool on a wire rack to prevent them from becoming soggy.
This chocolate bun recipe is inspired by my very popular cottage cheese pizza buns, where the original version includes ham and cheese, and I also have another version with spinach, feta, and sun-dried tomatoes.

Preheat the oven to 200°C (fan-assisted).
Blend cottage cheese, eggs, and honey together into a thin mixture. Add flour, vanilla sugar, cardamom, baking powder, and salt, and stir it together into a thick dough. Add the chocolate and mix.
Line a baking tray with baking paper and use two wet spoons to place 8–10 buns of dough onto the tray. Sprinkle with extra pearl sugar and chopped almonds.
Bake the buns for about 25 minutes. Let them cool on a wire rack and enjoy. Bon appétit!
