Biscuit cake consists of a chocolate ganache made with melted chocolate and butter, which is folded into a mixture of egg yolks and powdered sugar. The cake is assembled in a bread loaf pan, layering ganache and vanilla biscuits. Afterward, the cake is chilled, sliced, and served. You can decorate the cake with crushed vanilla biscuits or chopped nuts and freeze-dried berries. Enjoy!
Ingredients
350 g dark chocolate, chopped
150 g butter
50 g powdered sugar
4 pasteurized egg yolks
Approximately 30 vanilla biscuits
Approach
Melt the butter and chocolate in a saucepan. Let it cool slightly.
Meanwhile, whisk egg yolks and powdered sugar until they are light and airy. Then, add the melted chocolate to the mixture and whisk well.
Line a bread loaf pan with plastic wrap. Start by spreading a layer of chocolate at the bottom and slightly up the sides, then add a layer of biscuits. Continue alternating between a chocolate layer and a biscuit layer. Finish with a chocolate layer, and fold the plastic wrap over the cake.
Chill the cake in the refrigerator for at least 3 hours, preferably overnight.
Slice it and serve. Enjoy!
