Banana bread with oatmeal and cardamom – this banana bread is a perfect stop-food-waste baking project, as overripe boring bananas are excellent for this bread.
But if you don’t have overripe and soft bananas, then just blend the bananas using a handheld blender instead of mashing them with a fork.

3 large bananas, preferable over ripe
3 large eggs
115 g sifted all-purpose or spelt flour
65 g oatmeal
1 tsp. cardamom
1 tsp. baking powder
100 g dark chocolate, chopped
Approach
Banana bread with oatmeal and cardamom
Heat the oven to 180 C convection.
Mash the bananas with a fork and whisk the eggs into the bananas. Fold in the flour, oatmeal, cardamom and baking powder and then fold the chocolate into the dough.
Line a small loaf tin with baking paper, pour the dough into the tin and bake the banana bread for 30-35 minutes. Allow the banana bread to cool and then serve. Enjoy!
