Happy December 17th. Christmas and the blog offer lots of sweet treats, so today I want to share a recipe for healthier cookie dough truffles with chickpeas. You don’t bake these cookie dough truffles and there’s no butter, refined sugar, wheat flour or eggs in them either. You need honey, coconut sugar, peanut butter and almond flour and a few other ingredients, so they are actually a bit healthy. The cookie dough truffles are dipped in 70% dark chocolate and I sprinkled some salt flakes on top, too. And the cinnamon I added makes them a little Christmassy. Cookie dough truffles with chickpeas
Put all the ingredients (except the chocolate) in a food processor or blender and pulse to an even mixture. Then stir in the chopped chocolate and roll the mixture into 25 equal-sized truffles. Put them in the fridge while you melt the chocolate.
Melt the chocolate in a double-boiler and dip the truffles into the melted chocolate. Sprinkle the salt flakes on top and refrigerate until the chocolate has set. Enjoy!
