Serve this super easy dessert if you want to see surprised expressions on your guests’ faces. This raw carrot cake is also known as Tina’s popular carrot dessert, as the recipe was originally published in the Danish magazine Familie Journalen by a reader named Tina.

This raw carrot cake is very easy to make and requires only a few ingredients. It’s also made without using the oven, since the cake doesn’t need to be baked. The dessert consists of crushed macaroons placed in a dish and sprinkled with chopped Daim. Heavy cream is whipped with vanilla sugar and then mixed with sour cream. The whipped cream mixture is spread on top, and another layer is added. Finally, grated carrots are placed on top. The dessert can be served immediately or refrigerated for a couple of hours. It can also be eaten the next day, although the macaroons will soften quite quickly.

Spread half of the crushed macaroons in a dish. Sprinkle with half of the chopped Daim.

Whip the heavy cream with the vanilla sugar until stiff, then fold in the sour cream. Spread half of the whipped cream mixture over the chopped Daim.

Make another layer and finish by topping with grated carrots. If desired, add a little extra chopped Daim or crushed macaroons on top. Serve immediately or refrigerate until serving. Enjoy!
