Halloumi pasta

Halloumi pasta – Recipe for an easy and creamy pasta dish with halloumi, tomatoes, oregano and pine nuts. This vegetarian pasta dish is super creamy and really easy to make. The pasta dish consists of halloumi which is cut into cubes and fried until golden in a pan. Then fry onions and garlic with peppers, tomatoes cut in half, tomato paste, cooking cream and chilli flakes. Freshly cooked rigatoni pasta is tossed in the sauce together with the fried halloumi. I serve this pasta dish with toasted pine nuts and fresh oregano on top. You can also easily serve it with finely grated parmesan.

I have used rigatoni pasta here, but you can also serve it with other types of pasta.

Instructions

Fry the halloumi until golden on a dry pan. Put the halloumi in a bowl.

Fry the onion and garlic in the pan in olive oil. Add the tomatoes and peppers and fry them. Add tomato paste. Pour in cooking cream and crumble vegetable stock in. Leave to simmer.

Cook the pasta in salted water.

Pour the pasta water into the sauce, stir and season with salt, pepper and chilli flakes. Toss the pasta and halloumi in the sauce and serve the pasta dish with pine nuts and fresh oregano. Bon appetite!
