Flatbread with Feta and Spinach – Recipe for Turkish vegetarian flatbreads called gözleme with spinach and feta filling. These flatbreads, or savory breads, are so delicious and full of flavor. The dough is made without yeast, simply kneaded together quickly and left to rest under a damp cloth while the filling is prepared.
The filling consists of spinach, feta, chili, garlic, mint, egg, and pepper. Everything is mixed together and placed inside the dough along with grated mozzarella cheese. The flatbreads are then fried in oil in a pan until golden and crispy.
These Turkish gözleme breads are perfect for serving as dinner, and since they are vegetarian, they can easily replace meat in a meal. They can be served with homemade tzatziki or Greek salad.

Dough
Place all the ingredients into the bowl of a stand mixer and knead the dough with a dough hook until it comes together. Let the dough rest under a damp tea towel while you prepare the filling.
Filling
Pour boiling water over the spinach. Drain the water and press the spinach to remove as much liquid as possible. Let the spinach cool, then chop it. Crumble the feta into a bowl and add the pressed garlic, spinach, egg, chopped mint, chili flakes, and pepper. Mix everything together with a fork.

Divide the dough into 9 equal portions and roll them into balls. Roll each ball thinly to about 20 x 16 cm using a rolling pin. Place filling on one half of the dough and sprinkle with grated mozzarella. Fold the other half of the dough over the filling and press the edges firmly to seal.
Cover the bottom of a deep pan with oil. Heat the oil and fry 2 flatbreads at a time for about 3 minutes on each side or until golden and crispy.
Place the flatbreads on kitchen paper to absorb excess oil. Serve while still warm. Enjoy!
