Croque Madame and Croque Monsieur are delicious French sandwiches. The only difference between a Madame and Monsieur is that a Croque Madame has a fried egg on top.

Heat the oven to 180 C convection.
Stir the crème fraiche, grated cheese, mustard, salt and pepper together.
Toast the slices of bread in butter on both sides until the crisp and brown.
Then add ham to 4 slices of the bread and crème fraiche to the other 4. Sandwich them together so you have 4 sandwiches with crème fraiche and ham. Sprinkle a little more cheese on top if necessary and bake the sandwiches in the oven for 15-20 minutes. The bread must be crispy, and the cheese must be melted and preferably a little runny.
While they are in the oven, fry the eggs in butter. Put a fried egg on each of the pre-baked sandwiches if you would like a croque madame otherwise just omit the fried eggs. Enjoy immediately. Bon appetite!
