Cottage cheese bread

Cottage cheese bread – Recipe for easy gluten-free and protein-rich flatbread with cottage cheese. This flatbread with cottage cheese consists of only 3 ingredients: cottage cheese, eggs and salt. All 3 ingredients are blended into a thin and lump-free dough, which is poured onto a baking sheet with baking paper and spread. When the flatbread is baked, it can be cut into squares, which can be used as regular bread, e.g. like a sandwich with filling. The bread can also be used for a panini. However, the bread is not ordinary. sandwich bread, it’s more like an omelette. It is also perfect to make into a wrap with filling.

I use cottage cheese with 4% fat, but you can also easily use it with 1.5% fat. This bread is completely neutral, but if you want to add flavor to the dough, you can add garlic powder, thyme, oregano or chili powder.

Turn on the oven at 180 C fan.

Blend cottage cheese, egg and salt into a thin dough without lumps. Pour the dough onto a baking sheet with baking paper. Spread it out in an even layer. Bake for approx. 30 minutes until the bread is golden and “dry”.

Let it cool and carefully remove the baking paper. Cut it into 6 squares or cut it into 3 long pieces like I did. The bread may give off a little moisture, but if it is placed on a baking rack, it will quickly become dry again. Fill the bread with your favorite filling.
