Cottage Cheese Bowl with Sweet Potatoes – Recipe for the viral cottage cheese bowl with roasted sweet potatoes, spiced ground beef, cottage cheese, and hot honey.

This delicious, easy, and protein-rich bowl has gone viral on social media. It consists of diced sweet potatoes roasted in the oven with oil, salt, and pepper. The sweet potatoes are then served in bowls with taco-seasoned ground beef, diced avocado, diced cucumber, cottage cheese, hot honey, and dried chili flakes. A super tasty and filling dinner or lunch.

You can make your own hot honey (see my recipe here) or buy it in larger supermarkets. I use diced avocado and cucumber here, but you can add any vegetables you like, such as diced bell peppers or tomatoes.

Roasted Sweet Potatoes
Preheat the oven to 200°C (convection).

Peel the sweet potatoes and cut them into cubes. Place them on a baking tray lined with parchment paper, drizzle with oil, and season with salt and pepper. Roast in the oven for about 20 minutes.

Spiced Ground Beef
Sauté onions and garlic in oil over medium heat. Add the ground beef and taco seasoning. Cook until the beef is fully cooked through.

Divide the roasted sweet potatoes, spiced ground beef, diced avocado, diced cucumber, cottage cheese, hot honey, and dried chili flakes into four bowls. Serve immediately. Enjoy!
