Apple rolls

Apple rolls – Recipe for large and moist apple rolls with cinnamon and chocolate. These delightful apple rolls are incredibly delicious. The buns or rolls are very moist and airy due to the apples and yogurt in the dough, which keep them wonderfully moist and sponge-like.

To make the rolls, you create a dough that rises and is then poured out onto the table. A little well is made in the dough, where the chocolate, grated apple, and 2 eggs are placed. The dough is then folded over, ensuring that both the eggs, apple, and chocolate are well distributed. The dough is then divided into buns and baked. These apple rolls are made similarly to my popular carrot rolls. Enjoying a warm bun with butter is truly delightful.

The apple rolls can also be cold-proofed by using half of the yeast, allowing the dough to rise in the refrigerator overnight. This way, you can serve freshly baked rolls for breakfast. The rolls are also perfect for freezing and for packed lunches. Enjoy the baking process!

In a mixing bowl, combine yeast, milk, yogurt (or skyr), sugar, cardamom, and cinnamon. Add flour and salt, and knead the dough using a dough hook attachment. Gradually incorporate the softened butter while kneading. Knead the dough well until it pulls away from the sides of the bowl, becomes smooth, and is elastic.

Cover the bowl with a damp cloth and let the dough rise at room temperature for 1.5 hours.

Preheat the oven to 200°C (392°F) on convection mode.

Squeeze the grated apple to remove excess liquid.

Turn the dough out onto a surface lightly dusted with flour. Create a well in the center of the dough and fill it with grated apple, eggs, and chopped chocolate. Use a dough scraper or a palette knife to cut the dough into small pieces, mixing everything together.

Divide the dough into 14-16 equal pieces. Line 1-2 baking sheets with parchment paper and place the apple rolls on the paper. Cover them with a cloth and let them rest for about 15 minutes. Sprinkle pearl sugar and sliced almonds on top.

Bake the rolls for about 15-18 minutes or until they are golden brown.
