Pasta with Salsiccia – Recipe for the creamiest pasta dish with salsiccia sausage, mascarpone, and spinach.
This pasta dish is incredibly creamy and delicious and is perfect for dinner. It’s made with plenty of onions and garlic, sautéed together with salsiccia sausage, tomato purée, dried oregano, dried thyme, and dried chili flakes. Chopped tomatoes are added along with mascarpone, which is stirred into the sauce until smooth. Pasta cooking water and fresh spinach are added, and the dish is seasoned to taste before the cooked pasta is folded in. I serve the finished pasta with burrata, but it can also be served with freshly grated Parmesan, fresh basil, or simply freshly ground black pepper.
Salsiccia is an Italian fresh sausage with a rich, savory flavor. It comes either plain or seasoned with various spices. The meat is squeezed out of the casing and cooked much like ground meat. Instead of mascarpone, cream cheese can be used. You can also add cooking cream or white wine to the dish. For extra vegetables, try adding diced bell pepper, zucchini, or carrots. This pasta dish is perfect for both everyday meals and special occasions.

Sauté the onion and garlic in oil in a pan. Squeeze the meat out of the sausage casings and cook the meat for 3–4 minutes over medium-high heat. Add the tomato purée, oregano, thyme, and chili flakes. Pour in the chopped tomatoes and stir the mascarpone into the sauce. Let it simmer for about 10 minutes, stirring occasionally.
Cook the pasta.
Add some of the pasta cooking water to the sauce and add the spinach. Season with salt and pepper to taste, then fold the cooked pasta into the sauce. Serve the pasta with freshly grated Parmesan or burrata. Enjoy!
